We love making waffles and we love enjoying them with good company. From savoury to sweet, we pair seasonal ingredients that are local to Canada's west coast. In upcoming weeks we'll share our new recipes, a few of our stories about the mishaps we've encountered along the way, and we'll also host a number of test kitchens. Last night we were invited to speak about #DinnerPartyYVR on Vancouver Co-op Radio's 'Foodline Radio'. We were in studio with host Annika Reinhardt (who is the co-creator of Dinner Party YVR) and the talented Kelly MacGregor of Heritage Canadian Bakery.
Why Chicken and Waffles?
It's one of our favourites because it's exemplary soul food; unapologetic, full-fat, and delicious. Last summer we decided to try our hand at a chicken and waffles recipe. We have a few favourite brunch spots in Vancouver, so we used this goal as an excuse to revisit many to compare their chicken and waffles.
We’ve made a lot of mistakes. We’ve researched new and traditional recipes and we’ve also spoken to chefs and bakers. A lot of the time it comes down to the ingredients you’re using. The ingredients don’t need to be the most expensive, rare finds, but they need to be good. Today we’re sharing a few of the things we’ve discovered.
